Avocado Dip & Chips






Tuesday was chicken taco night in my house, but I stupidly forgot all about the avocado that I bought for the occasion since it was such an out of the blue purchase for me. Wednesday night was mac and cheese night, and that is when I realized that I had an avocado that needed to be used. Since mac and cheese isn't known for being full of avocado goodness, I had to come up with an alternate plan for the next day. The chip recipe is something I've been doing for years. You can change the texture of the chip by using different types of wraps. I have used tortilla wraps of all sizes, pita bread, and various flavors of sandwich wraps (spinach is my favorite).

While searching for ideas on how to use avocados, I found this helpful site.


This is the recipe that I based my avocado dip on, but I altered it slightly.


I only made enough for my boyfriend and myself, so if you want to make more use more ingredients.

Avocado Dip

1 avocado
1 plum tomato
1/8 of an onion (I used vidalia)
lime juice
garlic powder
salt

1) Chop up the avocado, tomato, and onion.
2) Put mixture in the bowl. Squirt mixture with lime juice to keep the avocado from browning.
3) Sprinkle garlic power and salt on mixture to taste.



Chips

Leftover tortillas, pita bread, or sandwich wraps
Olive oil
Salt and/or garlic powder

1) Preheat the oven to 350 degrees.
2) Stack wraps two at a time and cut them into wedges (I use a pizza wheel to make it easier). The larger the circle, the more wedges you should get from it. If you want to try and cut strips, you may, but it is harder not to overcook them.
3) Pour the oil into a small bowl, dip a silicone brush into the oil, and spread over chips. Oil both sides.
4) Put salt or garlic powder on both sides of the chip. Be careful not to add too much! (I made both types of chips with the last batch. The garlic ones are my favorite, but I like variety.)
5) Spray the baking sheet and line as many chips on the sheet as you can without them overlapping. Cook for 5 mins and then flip. Cook again for three additional minutes.*

*Cooking times will depend on the type of wrap you are using and how much oil you coated the chips with.
